How does cooking or canning or freezing affect lutein content?
I'm looking for the most efficient ways to get lutein and antioxidants into my diet.
Interesting enough I found a study done on yellow potatoes. It seems that certain cooking methods actually improve the lutein content based on the fact that it may be released when the cell structure changes in cooking. Read the information here...

Food sources of lutein and zeaxanthin, include corn, egg yolks and green vegetables and fruits, such as broccoli, green beans, green peas, brussel sprouts, cabbage, kale, collard greens, spinach, lettuce, kiwi and honeydew.
We have also been trying to increase our lutein levels but finally opted for supplements.

I am fed up with the big pharmaceuticals, western medicine, and the FDA. What is wrong with them?
Corrupt is all I can say.
Their basis of belief:
If the customer is sick, we'll treat the symptoms and send them on their way. "Thank you, we hope to see you all again"
Big pharma sure loves all that $$$ from manipulation of ailments.
If something non-patentable comes around they get angry and denounce it! No!..antioxidants cause cancer! Use our synthetic chemicals your body needs to rid the cancer! *heart attack or stroke may occur*
"Oh my goodness apple cider vinegar, honey, and garlic together makes a huge remedy for many things. Zoinks Billy this could hurt us! Let's use JAMA and say that these together are toxic and have no effects for one!"
And the FDA..where to begin.
Just wanted to thank WWD for providing the voice of reason. If anyone really doubts the benefits of western medicine, just travel to any 3rd world country and ask the locals what it's like to watch someone die from Malaria or any one of a hundred other illnesses that we've managed to keep in check.
And by the way, all those "alternative" medications that are freely sold at GNC and others are also provided by companies that are making ridiculous profits from peoples ailments. And usually with no verifiable benefits.

Is there a simple assay that could test the antioxidant content level in various foods?
I want to perform a science fair project on the possible differing antioxidant content levels in fruits and vegetables before and after being cooked by various methods, but do not know how to test for the antioxidant levels in a relatively cheap and simple way.
I'm not sure how cheap it is, but there are simple assays available. I've included links to a couple of relevant articles. You'll want to visit a local university to read these, and may need a science teacher to help translate them. Basically ignore any method that uses GC, MS, HPLC, or any other method that mentions a machine you've never used because chances are you don't have access to such a machine yet.
That leaves assays that use a dye or colored substrate, which is bleached by peroxide (oxygen free radicals). The idea is, the more antioxidant there is available, the less oxygen free radical there is to bleach the dye. You will still probably need a spectrophotometer, but every high school biology lab has at least one. DPPH or beta-carotene bleaching sounds promising, but I have no direct experience doing this.
Your best bet, if you're not shy, is to make an appointment with the chairman of the biology (or biochemistry or chemistry) department at your local university, and tell them what you want to do and ask for help. They may not be able to help you, but they'll know someone who can.
