Antioxidant Lutein

How does cooking or canning or freezing affect lutein content?
I'm looking for the most efficient ways to get lutein and antioxidants into my diet.
Interesting enough I found a study done on yellow potatoes. It seems that certain cooking methods actually improve the lutein content based on the fact that it may be released when the cell structure changes in cooking. Read the information here...

Food sources of lutein and zeaxanthin, include corn, egg yolks and green vegetables and fruits, such as broccoli, green beans, green peas, brussel sprouts, cabbage, kale, collard greens, spinach, lettuce, kiwi and honeydew.
We have also been trying to increase our lutein levels but finally opted for supplements.
